Life can get crazy but you still want to eat good food.  Today’s recipe for Easy Healthy Comfort Food: Chicken Picatta is favorite at our house.  The recipe can be made in about 30 minutes and it fits the description of New Comfort food!  Being made in lest than 30 minutes with just a few ingredients.  It’s easy and it’s healthier than most options.  The recipe is a lighter take on a classic recipe so you can indulge without guilt!  New Comfort Food fits with in todays lifestyle with balance in your life.

We love chicken in our family!  We like it any way: fried, baked, grilled  or sautéed just to name a few. But we’re watching our calorie intake so Im trying to avoid making a lot of fried foods. I love entertaining.  I like the process of planning ahead, doing all of the thinking about what everyone likes, what I can make to impress people and taking the time to have it come off without a hitch.  I enjoy making really great food that people enjoy and having it be so much more economical than having us all meet at a restaurant.

Yeah, are you laughing too?  Who doesn’t love to have the time to do this all of the time….. in a perfect world Id live like this on a regular basis…. time to plan, time to cook and decorate like it is in a magazine where the house is clean and organized and everyone envies that I’m completely  together.

But I live in the real world…. so more often than not we’ll have people over at the last minute and I need to rely on things that are in my house to make in a hurry.

I feel it starting…., the time of year when you have a million commitments.  You’ve barely put away the dishes and decorations from Thanksgiving and the Christmas cards are in your mailbox which reminds you you have to start working on those.  The party invitations start coming in too.  Christmas presents to buy and shopping will take away precious time.  I like to be prepared for when I know there won’t be time to cook…. so earlier in the month…. You’re both excited and panicked.  Friends coming for dinner tonight. You have a million things to get done but you want to make a meal that your company will love. Everyone has been crazy lately so you know comfort food needs to be on the menu.  These Beef and Sweet potato noodles recipe will be the star of your dinner party…. the best part?  It will look like you’ve cooked all day but its a meal that’s not super labor intensive!

These Beef and Sweet Potato Noodles are a sure way to satisfying anyone you cook for.  The recipe is a slightly tweaked version of my Grandmother’s recipe she made all of the time when I was growing up.  Whenever we would get to her house you could smell the beef simmering on the stovetop and the noodles would be drying on the counter.  I’m sure she must have made double the amount of noodles because my brother and I would sneak some ( a LOT of them) before they were cooked.

It’s that crazy time of year with the holidays coming up at full speed ahead combined with all of the end of year activities that keep you moving.   This recipe for Beef and Sweet Potato noodles is a tried and true recipe you can count on when you are having company over that will be a crowd favorite every time you make it.   …
