Ingredients
  • 2 pounds shrimp shelled and deveined
  • 1/4 cup butter
  • 1 cup mini peppers sliced
  • 1/4 cup minced onion
  • 3 cloves garlic
  • 1/3 cup wine (prosecco)
  • 1 1/2 cup heavy cream
  • salt and pepper to taste
Instructions
  1. Heat a large skillet to medium high and add a spoonful of butter to the pan once hot.  Melt the butter then saute the shrimp about 1-2 minutes per side.  The shrimp will start to turn white/pink but dont worry that it is not complete cooked thru.  It will cook further when added to cream sauce. 

  2. Remove shrimp from pan and place on a side plate.

  3. Into the same pan add in the rest of the butter. When melted, the sliced peppers and cook for 3 minutes (they are just starting to soften.  Then add minced onions and garlic and saute until cooked and just starting to turn golden brown about 4-5 minutes. Sprinkle flour over the top and stir until incorporated. (1 minute)

  4. Pour in the wine to deglaze the pan.  Using a wooden spoon scrape up any brown bits to incorporate into the sauce.  Reduce until 1/2 about 3 minutes.

  5. Add heavy cream and stir vigorously until thickened.  About 5 minutes. Then add shrimp and cheese and stir until shrimp is warmed and cheese is melted.

  6. Serve alone, atop rice, or toss in with pasta and serve immediately.
