Green St. Patrick's Day Cookies

Green St. Patrick’s Day cookies are an easy moist cookie packed with lots of festive green coconut. The same dough can be dyed bright green adding contrasting white chocolate to make it a showstopper.

Ingredients
  • 2 unsalted Butter 8 oz
  • 1/4 cup white sugar 4 oz
  • 1 3/4 cup brown sugar 12 oz
  • 2 Tablespoons lime zest
  • 2 large eggs
  • 3 1/2 cups All Purpose Flour
  • 1 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Baking Powder
  • 1 teaspoon Salt

Natural Cookie with Dyed Green Coconut (NOTE 2 explains how to dye coconut)
  • 1 Cup Coconut dyed green
  • 3/4 cup Pistachios
Bright Green Colored Cookie
  • 1 Cup Coconut Natural white Color
  • 3/4 cup White Chocolate Chips
  • Green Gel Food Coloring to get desired color I used 3 drops Americolor Gel
Instructions
  1. Preheat Oven to 350°
  2. In your mixing bowl, cream together butter, both sugars until they are lighter in color and well blended.
  3. Add lime zest and mix well.
  4. If you want the cookie to be bright green as pictured, this is where you will add 2-3 drops of gel food coloring and mix well. If you are using the dyed coconut version, do not use any gel coloring.
  5. One at a time add each egg and blend thoroughly.
  6. In a separate bowl sift together Flour, baking soda, baking powder and salt.
  7. Turn your mixer on low and add the flour mixture and mix until all combined.
  8. Remove bowl from mixer and stir in by hand remaining add ons you desire.
  9. Using a small 1" cookie scoop, scoop dough onto cookie sheet 3 inches apart. Alternatively use a spoon and scoop into 1 dough ball.
  10. Bake at 350 for 10 minutes until cookies are just starting to turn golden brown. Rotate cookie sheet at 5 minutes.
  11. Leave cookies on the sheet for 10 mins, then remove to cool completely to a wire rack.
  12. The cookie will end up being about 3" in diameter.
Recipe Notes

Feel Free to mix any additions that you like. The dough of this cookie is a great base for anything. I am just giving you the ratios of what I have pictured for you!

To make green coconut place 1 cup coconut in either metal or glass bowl. Then add one drop of food coloring gel and stir with a fork until all coconut is dyed an even color green. Once coconut is all coated, allow to sit for 10 minutes to dry. Then use as called for in recipe
