Ingredients
  • 1 pound Shrimp raw, peeled and deveined
  • 1 pound Chicken Thighs or Breast boneless and skinless,
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Spice Rub or creole seasoning Recipe link here
  • 1 large onion chopped finely
  • 3 stalks celery diced
  • 6 carrots peeled and diced
  • 1 Red Bell Pepper innards removed, diced
  • 1 Green Bell Pepper innards removed, diced
  • 6 cloves garlic minced
  • 1 can diced tomatoes 13.5 oz or close to it, use juice
  • 4 bay leaves
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Tabasco Sauce
  • 1.5 cups rice uncooked,
  • 6 cups Chicken Broth
  • 3 andouille Sausage sliced to 1/3" thick
  • salt and pepper to taste
  • Tabasco Sauce for serving optional
GARNISH
  • Chopped Fresh parsley. minced
Instructions
  1. Cut shrimp in half. Cut Chicken to bite size cubes. Place in bowl and sprinkle spice rub over the top and mix well. Set aside
  2. Heat a large stock pot to high, then swirl 3 tablespoons of oil into pot to cover bottom. Once oil is hot, add onions, peppers, celery and cook for 5 minutes.
  3. Add garlic, entire can of tomatoes(including juice) bayleaves Tabasco and worcestershire sauce.
  4. Cook for minutes then add rice in and stir to combine.
  5. Slowly add chicken broth and cook rice for 15 minutes.
  6. Then add shrimp, chicken and sausage and cook until meat is cooked through. About 10 minutes.
  7. Season to taste with salt and pepper.
  8. Sprinkle with Garnish of Fresh parsley.
  9. Serve with Tabasco sauce for those who desire a little added heat.
