Ingredients
  • 4 large Flour Tortillas
  • 1 spray Avocado Oil Cooking Spray
  • 1 13 oz can white beans drained
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 4 ounces colby jack cheese shredded
  • 1/3 cup sour cream
  • 1 small tomato diced
  • 1 Container Good Foods Chunky Guacamole
Optional
  • Hot Sauce to taste Such as Sriracha
  • Chopped cilantro
Instructions
  1. Preheat Oven to 300°
  2. Drain can of white beans and rinse thoroughly.
  3. Using an immersion blender puree beans cumin and salt. (You can add up to 2 tablespoons of water to get to a spreadable consistency.) Set aside.
  4. Spray both sides of tortillas with cooking spray.
  5. Place tortillas on a cookie sheet and bake for 10 minutes until golden brown.
  6. Remove Tortillas from oven.
  7. Spread a thin layer of beans over the top of tortilla shell, leaving about a 1/4' edge.
  8. Sprinkle cheese over top of beans.
  9. Put bean and cheese covered tortilla back into the oven and bake until cheese is melted, about 7 minutes.
  10. Remove from oven and drizzle sour cream over top, sprinkle tomatoes and place a dollop of Good Foods Chunky Guacamole evenly over top of tortilla.
  11. Using a pizza cutter or a sharp knife cut into pizza slices and serve.
  12. Sprinkle with cilantro and sirarcha sauce if you desire.
  13. Serve immediately.
