  • 4 pounds peeled Yukon gold potatoes cut into quarters
  • 4 tablespoons Butter
  • 1/4 cup 1/2 and 1/2 or heavy cream
  • 1.5 cups Gouda Cheese grated
  • a dash of ground nutmeg
  • salt and pepper to taste
  1. Add potatoes to a stock pot and cover with water.
  2. Bring to a boil and let cook for 20 minutes until tender.
  3. Once cooked, drain potatoes and either mash them in the pot or run them through a potato ricer and place them back into the pot.
  4. Add butter, cream, nutmeg and mix well (smooth constancy.)
  5. Add the cheese and mix well.
  6. Season to taste with salt and pepper.
