Large, succulent shrimp, wrapped in smoky bacon cooked perfectly on skewers.
Preheat oven to 400°
Remove shells from the shrimp and devein the shrimp. (Using a knife cut a small sliver down the back of the shrimp and remove the vein running down shrimp) Rinse and pat dry and set aside
Take 12 pieces of bacon and cut them in half. The bacon stays the same width, but becomes shorter. (You will now have 24 pieces of bacon)
Take one shrimp and skewer with wooden skewer. Then using one piece of bacon and wrap around each shrimp, tucking the end back under the skewer. (see image in post for how they look after wrapping)
Place Skewers on a baking sheet and place in oven for 20 minutes, flipping at 10 minutes. At the end of 20 minutes raise oven to broil to crisp up bacon for one last 5 minutes of cooking. All ovens are slightly different. Shrimp should be white and no longer see through when done cooking.
While bacon/shrimp are cooking make avocado salsa to serve along side as a dipping sauce. (recipe below). Serve immediately upon removing from the oven.
