The Swine Dining Wimpy BBQ Rub is the star of this recipe.  The rub’s from Swine dining are all made in small batches by hand to ensure excellent quality and freshness.  They are a new company and I was so excited to try this. Grilled Pork tacos are so easy… they are dusted with a small amount of the Wimpy BBQ rub.  Then you grill the boneless pork chop and serve it with a flavor boosted crema that you have infused with more of the rub and a splash of Citrus.  The Swine Dining Wimpy Rub is very mild, slightly sweet and the smokiness of it pairs well with the orange juice infused crema.

Grilled Pork Tacos with Wimpy BBQ Rub Crema Points of Interest:

Easy/Hard:   The hardest part of this recipe is slicing the pork chop thinly after grilling. Seriously, its pretty easy.

Prep:  The Rub is sprinkled on and the left to sit for just 15 minutes before grilling. It’s best served right after grilling so pork maintains its juicy deliciousness.  You can make the crema ahead… but its so easy, I usually just make it while the pork is grilling.

Cocktail Pairing:  This would go well with any crisp white wine (Pinot Grigio) or a Rose.  The citrus in the pork reminds me of island time… so I served it at our cocktail party with this Tropical Mai Tai!

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

GRILLED PORK CHOPS

  • 4 8 oz 1" thick Boneless Pork Chops, , trimmed
  • Salt and pepper to season
  • 1 Tablespoon Swine Dining Wimpy BBQ Rub Seasoning
  • 12 Minil Tortillas, , warmed

CREMA

  • 1/2 cup Sour Cream
  • 2 Tablespoons Orange Juice
  • 1 Tablespoon Swine Dining Wimpy BBQ Rub Seasoning

ADDITIONAL TOPPINGS OPTIONAL:

  • Slices of Avocado
  • Diced Tomato
  • Fresh Corn

Instructions

  1. Rinse Pork Chops and Pat dry.
  2. Generously Season with Salt, Pepper and 1 tablespoon of Rub.
  3. Let stand for 15 minutes.
  4. Preheat Grill (or get coals hot).
  5. Grill Pork Chops for 6 minutes on one side, then flip and grill for 4 minutes on the other side. Pork should be cooked through and no longer pink in the center, juices should run clear when cut.
  6. Once Pork is cooked, allow to rest for 10 minutes under a piece of foil to maintain heat.
  7. While Pork is resting add Rub, Orange juice and sour Cream and mix well.
  8. Once pork is done resting, slice pork very thinly.
  9. Place pork in center of warmed tortillas.
  10. Garnish with Avocado, Corn, and/or tomatoes.
  11. Drizzle Wimpy Rub Crema over the top right before serving.
  12. Serve immediately.

I wish I liked pork.... but I cant get anyone to eat it in my house.... but this crema worked great on chicken too!

I like that you used pork chops in this recipe! I usually do a pork tenderloin or something similar. Very nice.
